  1. Milk reception → weighing → filtration → cooled storage (milk storage tank).

  2. Standardization → cream separation (if needed) → blending.

  3. Pasteurization → homogenization (optional for smoother lassi).

  4. Cooling → transfer to fermentation/incubation tanks (for Dahi).

  5. Fermentation (curd set) → ageing / cooling.

  6. Blending & flavouring (for lassi) in mixing tanks → homogenize (if used).

  7. Filling & packing — cups (Dahi), bottles/pouches (Lassi).

  8. Rapid cooling / hardening / cold storage → dispatch.
